
World’s Best Gluten Free Chocolate Chip Cookies

315 g great value, all purpose, gluten free flour
1/2 teaspoon salt
1 teaspoon baking soda
150 g granulated sugar
164 g light brown sugar
1 stick or 112 g unsalted butter, softened
2 eggs at room temperature
1 1/2 teaspoons vanilla
7 ounces chocolate chips
Preheat oven to 325°F.
Combine all dry ingredients and mix with a stand mixer for 30 seconds.
Add softened butter, eggs, and vanilla, mix until combined. Add chocolate chips and mix until a soft ball forms or cookie dough texture.
Place parchment paper on a baking sheet, shape into balls, and press down slightly.
Bake for 8 to 10 minutes until set.
Makes 24 cookies.
*For Cookie Cake: use a 12” round pan and parchment paper. Press down until smooth, bake 15-18 minutes. A round pan with a small lip will help get a smooth edge.
* the great value all purpose flour has worked best in this recipe. I have tried several different types. To make dairy free substitute dairy free butter, and chocolate chips.
